Homemade Soup Recipe

Homemade Split Pea Soup

1 medium onion, diced
1 medium carrot, diced
1 celery stalk, diced
Half a pound of bacon, chopped
A pinch of salt for the vegetables
A cup and a half of dried split peas
6 cups of chicken stock or broth
A few pinches of dried rosemary
Salt and pepper to taste

Preparation

1. Starting with a cold soup pot, add the bacon and cook at medium-low heat.

2. When a lot of the bacon fat has "melted" off, drain the bacon. Leave enough fat to cook the bacon and vegetables.

3. Add the onion, carrot and celery, and light pinch of salt. If you drained off too much fat, add a bit of olive oil or butter.

4. Cook the vegetables and bacon on medium low heat until the vegetables are soft (5 to 10 minutes).

5. Add the stock, the split peas, and the rosemary.

6. Bring the soup to a boil, then reduce to low heat. Cover and let simmer for an hour or so.

7. Using an immersion blender, stand-up blender or electric beater, blend the soup into a nice thick consistent liquid. If the peas do not break down, let them cook for another 15 minutes and try again.

8. Salt and pepper to taste.

Notes

The ingredient amounts can be varied, but make sure you keep a 4 to 1 ratio of stock or broth to split peas. They will need that much liquid to absorb and become soft. If you are short on stock or broth, use water to top it up.

Also, if you like a creamier consistency, you can add some half and half, or even some heavy (whipping) cream. Some people even add a thickener, such as a roux, but I find my best split pea soup recipe makes a great textured soup as it is.


Homemade Turkey Soup Recipe.

5 Carrots, peeled and sliced
5 Celery Stalks, chopped
2 Large Onions, chopped
5 Garlic Cloves chopped fine
1 1/2 tsp. Thyme
3 cups Turkey
1/4 cup fresh Parsley, chopped
Salt and pepper to taste

1. Add the carrots, onions, celery, garlic and simmer for 45 minutes.

2. Drop in the turkey, parsley and thyme. simmer for 15 more minutes.

3. Add salt and pepper to taste.

OPTIONAL: If you wanted to you could add some noodles and turn this recipe into a homemade turkey noodle soup recipe.


Vegetable Soup Recipe

  • 3 Red Potatoes ( 1/2" Cubes)
  • 1/2 Chopped small Yellow Onion
  • 2 Sliced Carrots
  • 2 Minced Garlic Clove
  • 2 Sliced Leeks
  • 2 Stalks Celery, Chopped
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 1 1/2 C. Sliced Green Beans (2")
  • 1 Ear of Corn, Corn removed
  • 1/4 C. Finely Chopped Fresh Parsley
  • 3 Diced ripe Tomatoes
  • 1 Quart of Chicken or Vegetable Broth 
  • Wendy's Chili Recipe 

Ingredients:
  • 2 lbs. fresh ground beef
  • 1 qt. tomato juice
  • 1 (29 oz.) can tomato puree
  • 1 (15 oz.) can red beans, drained
  • 1 medium onion (1 1/2 c.), chopped
  • 1/2 C. celery, diced
  • 1/4 C. green pepper, diced
  • 1/4 C. chili powder1 tsp. cumin (if you like real flavor, add more)
  • 1 1/2 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 tsp. each: black pepper, oregano, sugar
  • 1/8 tsp. cayenne pepper

Cooking Directions :

In a frying pan, brown the ground beef; drain. Put the drained beef and the remaining ingredients into a 6-quart pot. Cover the pot; let it simmer for 1 to 1 1/2 hours, stirring every 15 minutes.
